Everyone loves chicken tenders, But the ones you get from the fast food place are full of chemicals and things you don’t want to think about. Its much better to make your own, its not nearly as hard as you would think and takes less effort than frying chicken parts. Most people use flour or cornmeal but for a nice change of place why not use pretzels?? they provide a nice salty flavor and great crunch. Since that’s not exactly healthy a good side dish for it is roasted broccoli. Roasting broccoli has great flavor and my kid loves it, much better than steamed or boiled. So lets get to it.
First you want to gather the ingredients to make the chicken tenders. I use garlic powder, seasoning salt, pepper and dry mustard. Mix that with beaten eggs and add the chicken tenders. While the tenders sit in the egg mixture, you need to crush the pretzels. Now you can use a food processor if you have one or you can put the pretzels in a plastic zip lock bag and bang the heck out of them with a rolling pin or heavy pan. What ever is easier for you.
Once the pretzels are broke down all you need to do is heat up a cast iron skillet with about 1/4 of a inch of oil. Enough to cover 1/2 the chicken. As soon as the oil heats up its time to “bread” the chicken, all you have to do is spread the pretzels on a plate and roll the chicken covered in egg into the pretzels. once fully covered gently place the chicken in the pan and do the next one. Once the pan is full wait until the bottom of the tenders start to brown and flip them. It should take about 4 minutes or so.
While you are watching the chicken fry you can prep the broccoli. Fist you need to heat the oven to 400 degrees. Then cut the broccoli (use fresh not frozen) toss it in oil and seasonings. I use BBQ seasoning but lemon pepper works great too. Once the broccoli is coated in oil and seasoned spread it on baking sheet.
Throw the sheet in the oven for 20 – 25 minutes until the edges of the broccoli starts too brown on the edges.
Once the chicken is done frying drain it on paper towels and sprinkle salt on them to flavor then all done.
Fried Pretzel Chicken
Chicken
2 lbs boneless skinless chicken tenders
2 eggs, whisked
1/2 teaspoon dry mustard powder
1/2 teaspoon garlic powder
season salt and pepper
Breading
2 cups pretzels, ground in the food processor (until they are the consistency of bread crumbs) (sourdough pretzels work best)
Vegetable oil for frying
Method
1. Preheat oil to 350 degrees. Combine eggs with spices in a large bowl. Mix well and add chicken.
2. Add pretzel crumbs to plate. When oil is hot, bread chicken and fry in oil until deep golden brown. Chicken should be firm and have an deep golden brown color. Place on paper towels or cooling rack after removing from oil.
